Among the most widely known desserts made with shortcake (a small crumbly cake that made from biscuit dough) is the Strawberry Shortcake.

These are made by tossing sliced strawberries with sugar, and allowing the mixture to sit for about an hour so that the fruits’ juices come out.

The shortcake is then split into layers which are each covered with layers of strawberry, juice and vanilla-flavored whipped cream, with the top shortcake layer laden with more sliced strawberries and whipped cream.

Paris trained pastry chef Amelia Carr of Coffee Time Cakes & Pastries brought her extensive experience in crafting sweet confections to play in making this new masterpiece: a Strawberry Shortcake especially made for a visit with me and my foodie friends.

This delightful dessert blew us away with its fresh fruity flavor and spongy light texture. You can get a slice for Php160 or a whole cake for Php1,300.

It’s definitely worth a second visit, or several, really.
